Recently, I was grabbing some flat iron steaks to grill, and at this grocery store, they had a Big Grove Brewery 12-pack that contained an IPA called Low Wake. I looked at the can and was curious as to what a Thiolized IPA is.
To Google to find out the formal definition to be: A thiolized IPA is an India Pale Ale that utilizes a modified yeast strain, known as thiolized yeast, to enhance the tropical fruit flavors in the beer. These yeasts are engineered to release thiols, aromatic compounds found in malt and hops, which contribute to flavors such as passionfruit, guava, and grapefruit.
My take on this IPA starts with the fact that it is very smooth. It is fruit-forward, with notes of citrus and passion fruit. It has the body of a West Coast IPA, but the fruit notes and lower hop bitterness of a hazy IPA.
Low Wake comes in at 7% ABV and features Omega Yeast's Helio Gazer, along with Alora, Mega Motueka, and El Dorado, with dry hop additions of Chinook CGX and Lotus.
